Monday, May 13th, 2013

A gluten-free and vegetarian diet may sound restricting, but for many who need to follow this dietary lifestyle or have chosen to do so, cooking without meat and without ingredients containing gluten inspires creativity in the kitchen and a real appreciation of plant-based cuisine.  A gluten-free vegetarian diet celebrates the fresh flavors of fruit, vegetables, whole grains, and lentils. Great tasting dishes, including risottos, curries, hearty stews and gratins, delicate soups, and sturdy casseroles, are all part of gluten-free vegetarian cooking.

Cooks who embrace this diet don’t rely on heavily processed foods with artificial ingredients.  There’s no need to when you’re cooking with fresh, naturally flavorful ingredients.  More Than Gourmet’s gluten-free vegetarian products are much the same.  Our vegetarian stocks and sauces are gluten-free because our time-honored recipes simply don’t call for anything that contains gluten.  There’s no need.  Our vegetable-based products are also certified vegan by the prestigious American Vegetarian Association because they are made carefully with only the best natural ingredients.

Fish Fumet Gives Your Dish a Kick of Flavor!

Thursday, May 9th, 2013

To create our fish fumet, we gently simmer the bones and trimmings of various white fish with white wine and aromatic vegetables to produce the highest quality fish stock, and we call it Fumet de Poisson Gold.  Its clear yellow color and lovely aroma make it outstanding as a braising or poaching liquid, in addition to its primary use in sauces.  Our fish fumet is the perfect flavor base for your fish and seafood dishes.

Check out our trusted recipe pages for a few ideas on how to use Fumet de Poisson Gold! Braise fish of your choice in our fish fumet, then add flavorful Asian ingredients to make Braised Fish with Thai Curry Sauce.  Or top some fish filets with sun-dried-tomato pesto, braise them in fish fumet, flake the fish into the braising liquid, and serve over pasta to make Sicilian Tomato Pesto Fish Sauce with Spaghetti.  You can also simply poach or braise fish in our fish fumet with some minced onion and fresh herbs and serve it with a little of the delicious braising liquid spooned over the top.

Fish stock is most commonly used in sauces.  For just the right complement to baked, grilled, or steamed fish, use our fish fumet to make a classic Velouté Sauce, or try building on that sauce to make nearly endless variations.  Sauce Aurore is Velouté flavored with tomato and finished with butter.  It’s terrific with salmon.  Sauce Chivry is Velouté flavored with fresh herbs and white wine, and It goes beautifully with delicate fish like sole or flounder.  You can find more sauce ideas for fish in in our recipe pages.

Fumet de Poisson works so well in seafood dishes because it has a balanced fish flavor.  It’s not overly strong and has a fraction of the salt found in commercial fish bases and clam juice.  Give our fish fumet a try and discover a secret ingredient sure to become a pantry staple!

Gourmet Gluten-Free Stock Is a Flavorful Foundation

Saturday, May 4th, 2013

Gluten sensitivity and celiac disease aren’t passing diagnosis fads. These are real conditions that affect the dietary habits of professional and home cooks alike. Some people experience mild discomfort from eating gluten, and others need to avoid it at altogether. Finding a restaurant that offers a good selection of gluten-free items can be difficult at best and impossible in some places. Often, the best place to find a truly gluten-free meal is in the home kitchen. Gluten-free stock helps new cooks and old hands alike by providing a trusted foundation. Fortunately, More Than Gourmet follows traditional French recipes to produce naturally gluten-free stocks for cooks of all skill sets and dietary lifestyles.

Cooking gluten-free doesn’t mean cooking without flavor or substance.  Natural stock made with fresh ingredients doesn’t even have any components that contain gluten.  A quality stock provides depth without overpowering a recipe with over-the-top flavors or excess ingredients. In a perfect world, all stock would be gluten-free stock.  However, this isn’t the case, and careful reading of labels on purchased stocks is a necessity.  In More Than Gourmet’s pantry, you’ll find a large selection of gluten-free stocks you can trust.

A quality foundation like a stock is a key component of a good meal. Some cooks prepare their own stocks, but, in reality, most just don’t have the time. Making stock requires a good chunk of time, effort, and several ingredients.  More Than Gourmet stocks keep the spirit of this  cooking tradition while allowing busier households to carry on with their days. Our cooks do the labor-intensive part, and you take home the results to create inspired meals of your own.

A flavorful starting point allows newer cooks a bit of leeway while learning what starches, veggies, and meats go well together for a filling gluten-free meal. Our family recipes offer more than a few suggestions to help cooks of all skill sets become accustomed to a healthy, gluten-free, yet delicious diet. If you struggle finding a recipe for dinner, just remember that the majority of natural ingredients have nothing to do with gluten. Our stocks, sauces, and large collection of recipes will help you create gluten-free meals without awkward substitutions.

Cooking without gluten isn’t as difficult as it seems at first. For example, filling starches don’t need to contain gluten to be flavorful. Root vegetables, including the beloved potato, are still gluten-free. Rice is safe, as well, so long as the company you purchase from hasn’t coated it in flour (check the ingredients label to be sure). Many grocery stores and markets have started stocking gluten-free pasta as public awareness about celiac disease has grown.  These starches will taste even better when cooked with a flavorful gluten-free stock.

It’s good to remember, too, that gluten-free stock isn’t only for those with sensitivities or allergies to a specific protein. Gluten-based ingredients, including flour, normally function as filler in pre-made stocks and sauces. This serves to “bulk up” the end product without adding or subtracting from elements of flavor. While these types of stocks aren’t unhealthy for everyone, they tend to lean toward the over-salted side of the flavor spectrum.

Gluten-free stock from More Than Gourmet doesn’t need filler. Our choice of vegetables, meats, and spices produces deeper flavors that work with the cook in creating tasty and filling dishes. Really, that’s the way stock should be. Our gluten-free stocks allow families with or without gluten sensitivities to experience gourmet flavors in their everyday meals.

French Demi-Glace vs. Vegetable Demi-Glace

Saturday, March 30th, 2013

More Than Gourmet provides a variety of sauces for your kitchen, whatever your cooking style. Our sauces star in many dishes, from the rushed weeknight dinner to labors of love. Vegetable demi-glace is a great sauce for omnivores looking to cook leaner as well as vegetarians seeking more flavor in their meals.  The recipe for traditional French demi-glace requires meat as an ingredient. Our Veggie-Glace Gold roasted vegetable demi-glace is a true vegetarian substitute that brings a new level of taste and flexibility to your kitchen.

The difference between traditional French demi-glace and vegetarian demi-glace lies most obviously in the exclusion of meat. More Than Gourmet follows the sauce tradition of Master Chef Escoffier in making our classic French Demi-Glace. We combine a veal and beef stock with Sauce Espagnole and gently reduce it for 30 hours. This process creates a sauce with robust flavor that omnivores can enjoy in many different dishes.

Our Veggie-Glace Gold is made in the French style from the finest and freshest ingredients without chemicals, MSG, fillers, preservatives, or artificial flavors or coloring, and it’s Certified Vegan by the American Vegetarian Association.  It offers the flavor, complexity, and sheen of a traditional demi-glace without the meat.  Vegetable demi-glace is possibly the best tool you can have in your pantry for light, vegetarian, or vegan cooking.

With our vegetable demi-glace, you can make Red Wine Peppercorn Sauce as a spicy, flavorful complement to grilled mushrooms or roasted potatoes and a variety of vegetarian main courses.  This great sauce is only one option for delicious vegetarian French cooking—check out our vegetarian recipes.  With our Veggie-Glace Gold, you can prepare healthy vegetarian or vegan French dishes that are truly more than gourmet!

Cooking with Beef Stock for Hearty Meals

Friday, March 22nd, 2013

Beef stock isn’t only for roasts and gravies. The hearty flavor of beef stock has the potential to infuse even the simplest dishes with a robust quality; it can transform plain root vegetables from a bland side to a dish worthy of being at the center of your plate. Use only a little beef stock, or as much as your recipe calls for, and create more flavorful and satisfying meals.

Some recipes can be enhanced by only the smallest amount of beef stock.  Our family recipe for Julia’s carrots is a perfect example. A tablespoon of Glace de Viande Gold added to the cooking water for the carrots infuses them with a beefy flavor. The remaining liquid is then used as a glaze for the carrots. Rice and orzo-based sides get a meaty kick of flavor with just a touch of beef stock. Earthy mushrooms and ripe tomatoes also pair well with a hearty beef flavor. Add just a cup of beef stock next time you prepare an Italian-style tomato sauce for a more robust flavor.

Other dishes call for beef stock as a primary ingredient. Succulent gravies and hearty soups require a larger amount of stock for truly delicious results. The soup need not be based on beef alone.  Savory mushroom stew has never tasted better than when beef stock is used as the starting point!   Our beef stock also gives braises like short ribs and corned beef and cabbage a terrific, beef flavor, and it can be a key ingredient in pot piessauces,  and even burritos.

Our Glace de Viande Gold is the best option for many types of recipes. Use just a bit or as much as your recipe requires, and let More Than Gourmet do the hard work of creating a perfect stock for your pantry.   Whichever type of recipe you choose, you can add an element of hearty comfort to your meals with our beef stock!

Lemon Dill Sauce: Tartar for Adults

Wednesday, March 20th, 2013

For many of us, fish sticks with tartar sauce are as nostalgic as peanut butter and jelly or that bright yellow-orange mac and cheese—foods from childhood.  Tartar sauce, a simple combo of mayo and pickle relish, has graced many a plate of kid-friendly fish, but grownup seafood eaters tend to fall into two camps: those who still like their tartar sauce and those who have moved on in search of something with more flair and flavor.  No matter which camp you’re in, More Than Gourmet’s creamy lemon dill sauce, with its elegant blend of citrus and herbal flavors, could become your favorite sauce for seafood.  Think of it as tartar sauce for adults.

Equally as tasty and creamy hot or cold, our lemon dill sauce will make fried, grilled, broiled, steamed or baked fish taste sublime.  This sauce also can do much more than dress up seafood. It’s great as a sandwich spread and salad dressing when a cold dish is in order.  Lemon dill sauce adds a hint of French flavor to quiches, potato salads, and even simply steamed vegetables.  Try it with chicken for turkey, or stir some into plain rice or pasta for a delicious difference.

Our pre-made lemon dill sauce is crafted by an accomplished chef and imported from France. The easy-to-heat pouches contain an impossibly buttery sauce with the fresh flavor of dill and tangy citrus notes. We promise an excellence rarely found with pre-made sauces.  Our lemon dill sauce is not just “good enough,” it’s as delicious as if your personal chef prepared it just for you in your home kitchen.  Give it a try.  You may never go back to tartar sauce.

Vegetable Stock Makes Veggies More Appetizing

Wednesday, March 13th, 2013

A vegetable dish doesn’t have to be a bland side dish included in a meal just to balance it out. Incorporate some vegetable stock into your next veggie dish to make it an appetizing part of the meal. More Than Gourmet’s reduced vegetable stock  is an ideal ingredient for delicious veggie-based dishes that will have your family asking for seconds on more than the main course.

Steamed or roasted veggies certainly have their place in a well-balanced diet. Packed with vital nutrients, these dishes have an undeserved reputation for being boring.  A simple sauce or quickly prepared glaze made with vegetable stock can transform these sides into beloved dishes that proudly grace your lunch or dinner menu.

Braising is a great method of preparation for vegetables of all types. Leafy greens and rustic root and winter vegetables all benefit from braising. Vegetable stock enhances the flavors of your selected vegetables without overpowering the whole dish.  The light yet robust flavor of our stock brings the fresh tastes to the surface much better than plain water, and can turn a mundane side dish into an extraordinary one without the addition of unwanted fat and salt.

You don’t need to be a vegetarian to love cooking with our vegetable stock.  Some people who eat meat have the tendency to cook all of their vegetable dishes with a meat- or poultry-based stock on the false assumption that vegetable stock just won’t cut it. To these cooks, we offer our gourmet vegetable stock. We roast our veggies before making our stock in order to amplify the rich vegetable notes. Celebrate the flavor of vegetables, and bring them to the center of your meal by cooking with vegetable stock. You’ll never look at veggies the same way again.

Roquefort Sauce and What It’s Used For

Monday, March 11th, 2013

Roquefort sauce might sound a little intimidating to a new cook. After all, the cheese responsible for its name and flavor is not thought of as an everyday food. If you think of Roquefort only as the “fancier blue cheese,” give it a try in sauce form. Roquefort is mellower and less pungent than many other blue cheeses, and More Than Gourmet’s Roquefort sauce has been mellowed further with the addition of cream, wine, and shallots, for a deliciously complex flavor.

Whether or not you like blue cheese, our Roquefort sauce adds a kick of French flavor to quickly prepared meals–both hot and cold. The creamy texture and irreplaceable flavor go perfectly with everything from hot wings to delicate roasted mushrooms and pan-seared steaks. Here are a number of ideas to help you incorporate our luxurious Roquefort sauce into your every day dishes.

When served warm, Roquefort sauce adds a creamy and delicate flavor to meats, poultry, and even simple vegetables. Bacon crumbles or sautéed mushrooms, plus a little Roquefort sauce, can take your grilled or pan-cooked steaks to new heights of perfection. Vegetarians may achieve the same delight by dressing up grilled vegetables with a touch of Roquefort sauce and toasted nuts. Try it on beets or winter squash for something a little out of the ordinary. A big, earthy Portobello mushroom cap is a taste of heaven with rich Roquefort sauce. If you’re looking for another layer of flavor in a dish you make with Roquefort sauce, try stirring in a little bit of brandy or bourbon into the sauce to add extra depth.

Chilled Roquefort sauce makes an amazing dip for fresh veggies or a spicy appetizer, and it even works well as a sandwich spread for roast beef or leftover poultry. Hot or cold, this sauce allows you to take your meals to new dimensions of gourmet flavor. Are you still hesitant? Well, we understand, but we have to encourage you to give it a try! The possibilities are endless with Roquefort sauce—it’s much more than just a run-of-the-mill blue cheese.

P.S. Tomorrow is the last day for a great deal on our Roquefort sauce, as well as our other four wildly popular sauces imported from France.  Get details here.

Chicken and Vegetable Stock: A Little Goes a Long Way

Thursday, March 7th, 2013

When you have a high quality stock on hand, a little bit goes a long way. More Than Gourmet’s culinary grade Chicken and Vegetable stocks allow you to bring out the flavors you want in your meal without overpowering the dish. We make stocks the way they should be – robust in flavor yet versatile. This quality allows you to use only a small amount and still achieve delicious results. Cooking with stocks can add an extra hit of flavor in side dishes, like rice pilaf and braised vegetables, and in main dishes like roasted chicken with a quick pan sauce. We have both concentrated and ready-to-use stocks that are sure to complement any cooking style.

Chicken and vegetable stock add depth to vegetable dishes, especially those that require some liquid in the cooking process. As a complement to white wine, use a small amount of chicken stock in a braising liquid. Combine as little as half a cup of stock with oil and spices for more flavorful marinades. More Than Gourmet’s chicken stocks are so flavorful that just a bit can enhance any nearly recipe you want to cook.

Additionally, vegetable stock is a very versatile ingredient that is not only for vegetarians. A small amount of vegetable stock allows you to braise your side dishes for meat-based meals without adding conflicting flavors of different meats. This quality makes it a valuable ingredient to have on hand for cooking pork, seafood, or soup.

The best quality stocks should enhance and complement the flavors of the spices and ingredients in your dish, not overpower them. Over-salted stocks determine the flavor of your meal before you even start cooking. More Than Gourmet believes that you should have the option to take your flavors in any direction. Read our labels and you’ll see that our stocks have the hearty flavor you require from chicken and vegetable stock without the overload of salt, spices, and MSG, to allow you to use as much or as little as you would like.
