"We came up with the concept of bringing a very hard-to-make and time-consuming product like stocks and sauces and initially brought it to foodservice," says Brad Sacks, CEO. "Then we realized that it could do very well for gourmet retail. May people look at a recipe and think 'I'm not going to bother with that' because it contains a demi-glace or stock. If it's hard for chefs, image how hard it is for the home cook."

And the concept has taken off well with both top chefs and consumers alike. The line now includes 17 products, from veal and poultry stocks to seafood and vegetable based sauces.

"We've seen tremendous growth on the retail side," Sacks says. "More and more people are interested in making gourmet dishes at home."

Sacks says the company is adding new products all the time and works with a variety of other specialty food producers to make customized products.

"We see the retail side of the business grow stronger and stronger, even when food service is down," he says.
