Creating a demi-glace, in the traditional manner of the legendary French master chef Escoffier, is a tedious process that involves browning veal bones, then slowly simmering them with selected vegetables in wine and water until substantial reduction has occurred. Creating a quart of demi-glace, for example, previously required about five pounds of veal bones that were then chopped, skimmed and strained in a careful process that consumed more than 25 hours of total cooking time. Constant attention and saucier-level skills were required during this preparation in order to prevent scorching the product.

Glace de Poulet Gold® is a 20-time reduction of classic French chicken stock, which requires the accomplished gourmet skills and more than 25 hours of simmering to achieve its deep roasted color and pure, intense flavors.

Glace de Poulet Gold can be used to create many classic French sauces by using it full-strength, when deglazing with wine in the roasting or sauté pan, or by diluting it with six parts of water to create a highly reduced stock for direct application in sauce preparations. For a classic chicken stock, one part Glace de Poulet Gold is simply added to 20 parts hot water.

In addition to being tremendous chicken stock, it can be used to enhance flavors in a wide variety of dishes, such as soups, stews, stir fry dishes, grilled items, marinades, etc. The home gourmet need only add a small amount of Glace de Poulet Gold to add tremendous natural flavor to any meal.
