Maple and Apple Cider Brine
Description
Try a different brine for this year's holiday turkey! This one will transport the flavors of dark, sweet maple syrup and tart apples into your beautifully browned bird.Ingredients
Makes
enough brine for a 12- to 14-pound turkey
- 1 cup kosher salt
- 2 cups pure maple syrup
- 3 ounces Veggie-Stock Gold® dissolved in 2 quarts hot water
- 2 quarts apple cider
- 1 tablespoon black peppercorns
- 1 gallon ice water
- 4 apples, cut in eighths and cored
Methods/steps
In a large stockpot, add the salt and maple syrup to the prepared stock, then stir in the apple cider and peppercorns. Bring the mixture to a boil, stirring to dissolve the salt completely. Add the ice water to cool the stock and refrigerate overnight or until the brine is completely chilled.
