Quick Allemande Sauce
Description
A silky smooth white wine sauce with a hint of lemon--serve it with seafood, poultry, or vegetables.Ingredients

- 1 container (11 ounces) More Than Gourmet White Wine Sauce
- 1 egg yolk
- 1/4 cup heavy cream
- 1 teaspoon lemon juice
- Salt and ground white pepper to taste
Methods/steps
- In a saucepan, the bring More Than Gourmet White Wine Sauce to a simmer and cook 2-3 minutes to reduce the sauce slightly.
- In a mixing bowl, whisk together the egg yolk and the cream.
- Remove the More Than Gourmet White Wine Sauce from the heat and whisk a small amount of it into the egg/cream mixture. Repeat until you've added about a third of the sauce. Slowly pour this mixture back into the pan, whisking constantly.
- Reheat the sauce to a very low simmer. (Do not bring it to a boil.) Whisk in the lemon juice and season to taste with salt and white pepper. Strain the sauce and keep it warm over very low heat (or in a thermos).
