Quick Champagne Velouté Sauce
Description
Ladle this luxurious sauce over baked white fish, poached chicken, or steamed spring vegetables.Ingredients

- 1/2 cup champagne or other sparkling wine
- 1 shallot, minced
- 1 container (11 ounces) More Than Gourmet White Wine Sauce
- 1 tablespoon unsalted butter
- Salt and ground black pepper
Methods/steps
- In a small saucepan, stir together the champagne and the shallots. Bring the mixture to a boil and cook until the champagne is reduced by half.
- Add the More Than Gourmet White Wine Sauce and simmer gently for 3 minutes. Whisk in the butter and simmer until it melts into the sauce. Season to taste with salt and pepper.
