Asian Glazed Salmon Fillets

| What takes salmon from simple to superb? A glaze made with Essence de Champignon Gold, mirin, grated ginger and a touch of soy sauce. A fetching sprinkle of toasted sesame seeds and fresh chives add eye appeal. This recipe can be doubled.

Ingredients:

- 2 salmon fillets, skin left on 1 side
- 1/2 t. (3 ml) vegetable oil
- Salt and freshly ground black pepper
- 2 T. (30 ml) mirin, available in Asian markets, or marsala

- 1 T. (20 g) Essence de
Champignon Gold®
- 1 t. (7 g) grated fresh gingerroot
- 1/2–1 t. (3–5 ml) soy sauce
- 2 T. (9 g) sesame seeds, lightly toasted
- 1 T. (5 g) chopped fresh chives

| Preheat oven to 375°F. Combine mirin,
Essence de Champignon Gold®, ginger and soy in a small bowl. Brush salmon with oil, season with salt and pepper. Heat an oven proof skillet over high heat. Lay salmon, skin side down, in pan and sear for 1–2 minutes. Turn, brush top of fillets with glaze and bake until done, 8–9 minutes. Sprinkle on sesame seeds and chives and serve.
