Wild Game Sausages on Cheesy Grits with Maple-Chipotle Chili Sauce

Be as wild as you dare with your choice of wild game sausage. We like wild boar, but duck, rabbit, or even traditional pork sausages will be mighty fine, too. Nestled atop of cheesy grits along with the zestiest sauce this side of Santa Fe, they're a treat!

Ingredients:

- 4 c. (1 L) water
- 1 t. (5 mL) salt
- 1 c. (250 mL) quick-cook grits
- Freshly ground black pepper to taste
- 6 oz. (180 g) grated Asiago cheese
|
- 8 wild boar or other game sausages
- 2 T. (30 mL) canned chipotle chili sauce (available at Hispanic markets)
- ¼ c. (60 mL) pure maple syrup
- 1½ oz. (45 g) Glace de Viande Gold®

Bring water to a boil in a medium saucepan. Add salt, then slowly pour in grits, stirring constantly. Cover, adjust heat to low, and cook until soft, about 20 minutes, stirring occasionally. When cooked, season with pepper and stir in cheese. While grits cook, grill or sauté sausages until browned and cooked through. Combine chipotle chili sauce, maple syrup, and

in a small saucepan and heat until hot. Spoon grits onto a platter or divide among 4 dinner plates. Add sausages and spoon on sauce. Pass extra sauce at table.
