Gravy gets a bad rap. It's not "culinary," it's "not a classic French sauce." Well here's a little secret that grandma knew: real gravy is based on the same culinary tradition used for
elegant French sauces. It's based on many of the same ingredients, be it
demi-glace, glace de viande, or roasted turkey stock.
