Basic and Easy Polenta
Using Chicken Broth Concentrate
This easy, unadorned polenta is perfect for serving with stews and braises, or as a side dish for roasted or grilled veggies, fish, poultry, or meat.
6 cups water
1 teaspoon salt
1 1/2 cups polenta (or cornmeal)
2 tablespoons unsalted butter or olive oil, optional
Combine theKitchen Accomplice Chicken Broth Concentrate orChicken Bone Broth Concentrate, water, and salt in a large, heavy saucepan. Bring to a simmer over medium heat, whisking until the concentrate dissolves.
With the broth at a simmer, gradually whisk in the polenta. Simmer the polenta, stirring constantly with a heatproof spatula or wooden spoon, until it thickens and all the broth is absorbed, about 10 minutes.
To enrich the polenta bit, stir in the optional butter or olive oil at the end of cooking time. Serve immediately.
