Using Chicken Broth Concentrate
This delightfully fragrant recipe for Italian Wedding Soup is made with our Chicken Broth Concentrate, tangy lemons, tender spinach, and mouthwatering meatballs! Everyone will enjoy this hearty and delicious soup!
For the Meatballs:
1lb Ground Chicken Or Turkey
Salt and Pepper
2 Garlic Cloves, minced
¼ Yellow Onion, minced
1 tsp. Italian Seasoning
½-1 tsp red pepper flakes
¼ C. Parmesan cheese
¼ C. Panko Breadcrumbs
1 Egg
For the Soup:
2 Tbsp. Olive Oil
1 Yellow Onion, chopped
2 Medium Carrots, chopped
2 Celery Stalks, chopped
1 tsp Dried Basil
½ tsp Dried Oregano
½ tsp Dried Thyme
4 Tbsp. Kitchen Accomplice Chicken Broth Concentrate or 8 Tbsp. Kitchen Accomplice Organic Chicken Bone Broth Concentrate, diluted in 6 C. water
½ C Acini De Pepe or Orzo Pasta
1 C. Swiss Chard or Baby Spinach
Salt and Pepper, to taste
Lemon Wedges, for serving
In a large mixing bowl, combine all ingredients and fully incorporate.
Using two spoons or a small cookie dough scoop, roll the meat mixture into 1½-inch balls.
Bake in a 375-degree oven for about 10 minutes before transferring to the soup.
In a stockpot, heat the olive oil over medium heat.
Sauté the vegetables for 5 minutes, until just softened. Add herbs and Sauté for 5 more minutes or until the carrots are tender.
Add the broth. Bring to a boil and add pasta.
Once the pasta is tender, reduce the heat. Add meatballs and acini de pepe or baby spinach.
Serve with lemon wedges.
