A satisfying variation on the Greek lemon chicken soup avgolemono. The sunny colors will remind you of spring, just when young asparagus begins to come to market. Try it with blanched sugar snap peas or tiny broccoli florets. Add vegetables at the end to preserve their fresh, bright green color. Serve soup hot or at room temperature.
Ingredients
1/3 pound tender, thin asparagus, trimmed and cleaned
Steam or boil asparagus until crisp-tender. Drain asparagus, shock in cold water to stop cooking, blot dry on paper towels and cut into 1-inch pieces. Set aside.
Melt butter in large saucepan over medium heat. Add onion and sauté until transparent, 4 to 5 minutes, stirring occasionally.
Add asparagus to soup and season to taste with salt and pepper. Heat lemon soup gently, but do not boil. Serve at once, sprinkled with parsley and grated lemon zest.
