Using Chicken Broth Concentrate
Savory meets sweet in this delicious and easy-to-make rice pilaf with dried cranberries and chopped pecans.
2 C. Wild Rice Blend, uncooked
1 Tbsp. Kitchen Accomplice Chicken Broth Concentrate or 2 Tbsp. Kitchen Accomplice Organic Chicken Bone Broth Concentrate, prepared with 4 C. hot water
1½ c. Dried Cranberries, coarsely chopped
2 tbsp. Olive Oil
3-4 Carrots, diced
2 Celery Stalks, diced
1 Yellow Onion, diced
Salt and Pepper
½ C. Fresh Parsley, chopped
½ C. Pecans, chopped
Cook the wild rice with 4 C. of prepared broth in a rice cooker. Add cranberries in the last 2 minutes of cooking.
As the rice cooks, heat oil in a large stockpot. Stirring regularly, cook the carrots, celery, and onion until tender.
In a large bowl, incorporate the cooked wild rice and vegetables. Season to taste.
Stir in chopped parsley and pecans to serve.
