Turkey meatballs and zucchini noodles is a lighter version of a comforting classic! This recipe is made using our Wicked Juicy Burger to make those meatballs perfectly juicy and flavorful!
Add onion, garlic, dried herbs, fresh parsley, egg, Parmesan, breadcrumbs and ricotta to the turkey mixture and incorporate. Season with salt and pepper to taste.
Use a spoon to form the mixture into meatballs, about 1½ inch in diameter.
Heat oil in a large skillet on medium-high. Brown the meatballs in batches, placing on the baking sheet. Transfer to the oven for 8-10 minutes, until juices run clear.
Easy Marinara:
Heat oil in a stockpot over medium heat. Add onions and garlic, and cook until tender. Add herbs and sauté for 2 minutes.
Add tomatoes, tomato paste and wine.
Simmer for 30-60 minutes, until reduced by ¼.
Zucchini Noodles:
Heat the olive oil in a large skillet or wok. Add the spiraled zucchini and season with salt and pepper, to taste.
Stirring occasionally, allow the zucchini to cook for a few minutes, until just tender.
Remove the zucchini from the heat and stir in fresh basil and parmesan.
Toss the noodles with Easy Marinara and top with Turkey Meatballs.
Garnish with additional fresh basil and parmesan, as desired.
