
Dress Up the Ordinary
This simple, unadorned polenta is perfect for serving with all manner of stews and braises, or as a side dish for roasted or grilled veggies, fish, poultry, or meat.
1 1/2 ounces Veggie-Stock Gold® (or 1 ounceFond de Poulet Gold®)
6 cups water
1 teaspoon salt
1 1/2 cups polenta (coarse cornmeal)
2 tablespoons unsalted butter or olive oil, optional
Combine the Veggie-Stock Gold®, water, and salt in a large, heavy saucepan. Bring to a simmer over medium heat, whisking until the Veggie-Stock Gold® dissolves.
With the stock at a simmer, gradually whisk in the polenta. Simmer the polenta, stirring constantly, until it thickens and all the stock is absorbed, about 10 minutes.
To enrich the polenta bit, stir in the optional butter or olive oil at the end of cooking time. Serve immediately.
