
Quick White Bean Stew with Swiss Chard and Tomatoes

A hearty, Italian-style stew for a chilly evening--and it's simple to prepare!
Ingredients

2 pounds Swiss chard, large stems discarded and leaves cut crosswise into 2-inch strips

1 pound mild Italian sausage

3 garlic cloves, thinly sliced

1 teaspoon dried thyme
-
1 teaspoon dried oregano
-
1/4 teaspoon crushed red pepper

1 can (14 1/2 ounces) diced tomatoes

1/2 cup (4 ounces) tomato paste

3 cups water
-
3 cans (16 ounces each) cannellini beans, drained and rinsed

1 1/2 ounces Glace de Veau Gold® or Glace de Viande®

Methods/Steps
Bring a saucepan of water to a boil. Add the chard and simmer over moderate heat until tender, 8 minutes. Drain the greens and gently press out excess water. Set aside.
In a soup pot, sauté the sausage over moderate heat. Add sliced garlic, thyme, oregano, and red pepper and cook a few minutes. Add the tomatoes and tomato paste and cook a few more minutes.
Add water, Swiss chard, beans and Glace de Veau Gold® or Glace de Viande®. Stir until blended and simmer over moderate heat for 30 minutes.
Season the stew to taste with salt and pepper.
