This traditional Southern way of cooking green beans is one of our favorites. They're slowly simmered in our flavorful chicken stock with bacon, onion, garlic, and a pinch of red pepper flakes, until they're tender and infused with great flavor.
6 slices bacon, cut in 1-inch pieces
1 medium onion, diced
2 cloves garlic, minced
Pinch red pepper flakes, or to taste
2 1/2 pounds green beans, trimmed
2 cups water
3/4 ounce Fond de Poulet Gold®
Salt and ground black pepper
In a large skillet over medium heat, cook the bacon until some fat is rendered, about 5 minutes. Add the onion, and cook until the onion is translucent, about 5 minutes. Add the garlic and red pepper flakes and cook 1 minute more.
Add the green beans, water, and Fond de Poulet Gold®, stirring until the concentrate dissolves. Season with salt and pepper. Reduce the heat to low, partially cover the pan, and simmer until the beans are tender, but not mushy, 20-30 minutes. Taste and season as needed with more salt and pepper.
