
Spicy Beef and Bean Burritos

The smoky flavor of chipotle, chiles, peppers, and plenty of spices takes this traditional Tex-Mex dish from ordinary to superb. Serve it with grated pepper jack cheese, salsa, guacamole, or try our delicious recipes for Green Chile Sauce or Poblano Chile Sauce.
Ingredients

1 pound ground beef

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon chile powder

1 tablespoon chile powder

3 cans (15 ounces each) pinto or black beans, rinsed and drained

3/4 ounce Glace de Viande Gold® dissolved in 2 cups hot water

1 can (4 ounces) roasted chopped green chiles

1 commercially prepared roasted red pepper, chopped

1/2-1 chipotle pepper, minced
-
1/4 cup chopped cilantro

Salt and ground black pepper

Warm flour tortillas, for serving
Methods/Steps
Warm a large, heavy skillet over medium heat. Add the ground beef and the onion, and cook, stirring to break up the beef, until the beef is browned and the onion is tender, 5-6 minutes. Add the garlic, chile powder, and cumin and cook for another minute.
Stir in the beans, diluted Glace de Viande Gold® green chiles, red pepper, and chipotle and simmer, crushing the beans with a wooden spoon or a potato masher, until the mixture has thickened, about 15 minutes.
Stir in the cilantro and season to taste with salt and pepper. Transfer the beef and beans to a serving dish and serve with warm tortillas and your choice of sauces and accompaniments.
Additional Tips
Wine Pairing: Zinfandel or Malbec. Beer is also an excellent choice with Tex-Mex food. Try a lager or a double bock style beer, or even a porter, with this dish.
