A 30-time reduction of perfect fish fumet, Fumet de Poisson Gold® is made from the bones and trimmings of a variety of white fish with white wine and aromatics. It is delicately simmered to the point of fumet, then reduced all the way down to a glace. The fish fumet's clear yellow color and lovely aroma are outstanding as a braising or poaching liquid, in addition to its primary use in sauces. Used full strength, Fumet de Poisson Gold® adds just the right touch to classical sauces, giving them a complexity not duplicated with simple fish stock.

How To Use Fumet de Poisson Gold®

Reconstitution Suggestion:
Use one part Fumet de Poisson Gold® to up to thirty parts hot water to make a classic fish fumet (stock). Bring to a simmer and whisk until completely dissolved.

Available Size(s):
16 oz. (450g) - Makes approximately 4 gal. (15 l) of classic fish fumet (stock). 
1.5 oz. (42.5g) - Makes approximately 6 cups (1.4 l) of classic fish fumet (stock).

Fumet de Poisson Gold® Ingredients

Fish Stock (Pollock, Cod, Salmon), White Wine, Dried Fish Stock (Cod), Fish Gelatin (Tilapia), Salt, Mirepoix Stock (made of carrot, celery and onion stocks). FDP-081706A 

Product contains fish (pollock, cod, salmon, and tilapia). May contain trace amounts of shellfish (lobster, crab, shrimp). Product is gluten-free.

Go To Stocks, etc

Have been a home cook customer of these items for years (and made in my home town!). Consistent flavor and quality. Miss the seafood and game stocks though.

Invaluable Product

Almost unique product, rarely offered for sale Highly effective as the basis for fish sauces and soups. I add water, wine, shallots, pepper, sometimes herbs and then reduce. Very fair price. Prompt delivery.

Must have for your pantry!

This and all other MTG products are excellent. You can add additional flavor in less time with less work. There stocks and Demi-glaces have taken my food to the next level!
