Outstanding Quality
All of the varieties of demi-glace produced by More Than Gourmet are excellent. I've used most of them at one time or another. I used this one for a stew I made--it's a beef bourguignon recipe, with venison instead of the beef. I cooked each of the ingredients separately to give it the best texture and flavor, and I cooked the venison sous vide for 10 hours so that it would be tender. Instead of the required 2 cups of venison stock, I used one puck of venison demi-glace and two cups of water.

The result was delicious. You can use the demi-glace to make a sauce, as well. Instead of just mixing with four cups of water as given in the direction, I use a cup of wine (red or white depending on the type of demi-glace), a tablespoon or two of sugar (so that it's not bitter) and water to thin it a bit. Then cook that and adjust seasoning to taste.

The More Than Gourmet demi-glace products allow you to make a terrific sauce in just a few minutes. Once you begin using them more often, consider the one-pint containers--it's a lot less expensive that way, and they keep in the refrigerator for a long, long time.
