Braised Shrimp with Pancetta

Looking for a festive but simple seafood dish? You've found it: tender shrimp quickly braised with green onions and crisp cubes of savory pancetta.


  • 4 ounces pancetta (or bacon), cut in small dice
  • 2 pounds raw shrimp, peeled and deveined
  • Salt and ground black pepper
  • 1 bunch green onions, thinly sliced
  • 2 teaspoons Glace de Fruits de Mer Gold® dissolved in 1 cup hot water
  • 2 1/2 tablespoons chopped fresh parsley
  • 2 tablespoons cold unsalted butter


  1. Add the pancetta to a large skillet over medium heat. Cook, stirring often, about 10 minutes or until the pancetta is almost crispy.
  2. Season the shrimp with salt and pepper.  Increase the heat to medium-high and add the shrimp and green onions. Cook, stirring, for 2 minutes. Add the dissolved Glace de Fruits de Mer Gold® and bring the liquid to a simmer. Cover the skillet and cook for about 2 minutes, until the shrimp are just opaque and slightly curled.
  3. Remove the pan from the heat and add the parsley and butter, stirring until the butter melts.  Taste and season as needed with more salt and pepper.
