Lemon Herb Couscous

Fluffy couscous flavored with lemon and fresh herbs makes a quick and delicious side dish for grilled fish or chicken.

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • 2 teaspoons Fond de Poulet Gold® dissolved in 2 cups hot water
  • Finely grated zest of 1/2 lemon
  • 1 10-ounce box couscous (1 1/2 cups)
  • 1/2 cup chopped fresh parsley
  • 1/2 cup mixed chopped fresh herbs such as basil, cilantro, and mint
  • 2 tablespoons lemon juice
  • Salt and ground black pepper


  1. Warm the olive oil in a large saucepan over medium heat.  Add the onion and sauté until it is tender and translucent.  Add the garlic and cook for another minute.
  2. Stir in the diluted Fond de Poulet Gold® and the lemon zest and bring the mixture to a simmer.  Remove the pan from the heat and stir in the couscous.  Cover the pan and let it stand for 5 minutes.
  3. Fluff the couscous with a fork and stir in the chopped herbs and lemon juice.  Season to taste with salt and pepper.
