Mexican Red Rice (Arroz Rojo)

This rice dish flavored with salsa, onion, and cilantro makes a colorful, tasty side for a Mexican or Tex-Mex meal. Make it a main dish by stirring in some cooked shrimp, chicken, chorizo, or roasted veggies.


  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups long-grain white rice
  • 3/4 ounce Glace de Poulet Gold® (or Veggie-Stock Gold®) dissolved in 2 cups hot water
  • 2 cups quality prepared tomato salsa
  • 4 green onions, white and green parts, thinly sliced on the diagonal
  • 1/4 cup chopped fresh cilantro


  1. Warm the oil in a large saucepan over medium heat. Add the onion and cook until it softens, about 5 minutes. Add the garlic and cook for another minute. Stir in the rice and cook 5 minutes longer.
  2. Add the diluted  Glace de Poulet Gold® and the salsa, bring the mixture to boil, reduce the heat to low, cover, and simmer until the liquid is absorbed, about 15 minutes.
  3. Serve garnished with the green onions and cilantro.
