Poblano Chile Sauce

The smoky flavor of roasted poblano chiles gives a savory depth to this simple sauce. Use it with your favorite Mexican or Tex-Mex dishes like enchiladas or tacos, or serve it with grilled chicken, burgers, meat, or fish.


about 2 cups
  • 1 large onion, diced
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 6 fresh poblano chiles, roasted, peeled, seeded, and diced
  • 2 teaspoons Veggie-Stock Gold® (or Glace de Poulet Gold®) dissolved in 1 cup water
  • Salt and ground black pepper


  1. In a medium saucepan, sauté the onion in the oil over medium-low heat until the onion is translucent, about 3- 5 minutes. Add the garlic and the cumin and cook another minute.
  2. Add the chiles and the dissolved Veggie-Stock Gold®, bring the mixture to a simmer, and cook for 15 minutes.
  3. Purée the sauce in a blender until smooth, working in batches if necessary. Return the sauce to the pan over low heat and season to taste with salt and pepper.
