Pumpkin Polenta

Pumpkin's savory flavor and rich color make this a show-stopping side dish. Serve it with pork, duck, chicken, or sausages, or top it with sautéed mushrooms, roasted veggies, or salsa for a vegetarian main dish.




  1. In a large saucepan, bring the water to a boil over medium-high heat.  Whisk in the Glace de Poulet Gold® or Veggie-Stock Gold® and the butter and whisk until both are dissolved.  Reduce the heat to medium-low and gradually whisk in the cornmeal.  Add the pumpkin purée and whisk constantly until the mixture is smooth.  Continue cooking, stirring frequently, until the polenta has thickened, 10-15 minutes.
  2. Stir in the Parmesan cheese and season to taste with salt and pepper.
